Uganda - Sanduku - 72% dark chocolate

The Sanduku is a dark, strong and intense but recognizable chocolate! This box fermented version of our Uganda collection is quite specific and a must to check if you like it or not.

The cocoa:

  • name: Sanduku

  • origin: Uganda, Bundibugyo, Semcu

  • the cocoa was produced under ZOTO protocol

The chocolate:

  • 72%: 67% cocoa - 5% cocoa butter added - 25% beet sugar

  • Post-harvest controlled chocolate bar

  • 45-50g

This chocolate is made from Uganda chocolate produced by Semcu

The ITC project is active in African countries to help cocoa farmers improve their products. Fantastic!

We are involved in the Ugandan project and have developped 2 protocols for Semcu: a box fermented cacao vs. a heap fermented cacao.

ZOTO made 2 chocolates from those, of which 1 is the Sanduku regional blend.

Amazing to see the enthousiasm of the cocoa farmers and eagerness to learn!
