This chocolate bar is made from white beans from hacienda Betulia.
Don Pablo Velez, the cocoa producer of this authentic hacienda is extremely dedicated to produce the best possible cocoa beans from Colombia.
Thorough genetic and sensorial analysis of wild local varieties in the farm led to a reproduction of three genetic varieties which produce purely white beans: B6, B8 and B9.
ZOTO got involved after 7 years of work, when cocoa production volume of those 3 special varieties came to a level where entering the market became relevant. We helped finetuning the fermentation protocol during 1 year and are convinced that Don Pablo has all the skills to follow up independently the post-harvest processes in order to provide exquisite beans to the fine flavor market.
We chose the variety B8, as it has a unique flavor profile and is very limited in volume.
Our chocolate is a 70% dark chocolate, with an appearance of a milk chocolate, because of the white beans.
